Sometimes they’re called mezclas, sometimes they’re called ensambles, and sometimes that “a” turns to an “e” for “ensemble.” Some geeks call them field blends, as if anyone is doing any blending in a field. Less than 12 hours after we dropped this episode, cuentacuentos.mezcal checked in to say, “Just bought an ‘ensamble de campo’ day before yesterday, which was the term right from the mezcalero’s mouth and he did mix it in the field when he harvested the agaves.” So … actual field blend! Anyway, everything else stands.
